Poached BOULDER BLUES Salmon Crostinis

An easy, fun and healthy appetizer to make a party of twenty or two.
Poached BOULDER BLUES Salmon Crostinis

Yields: 12-16 appetizers                 

Cooking with Tea Technique: Poaching


Ingredients:

- 1 whole wheat baguette, 12 -16 crostinis

- 1 lemon, 8 slices 1/4 in thick

- 1 TBS Boulder Blues green tea, loose

- 1 TBS parsley, leaves finely chopped, stems reserved

- 1 TBS tarragon, leaves finely chopped, stems reserved

- 1 shallot, minced

- 1 cup dry white wine

- 1/2 cup water

- 1 lb salmon fillet (1 1/2 in thick), medium diced

- 1/2 cup crème fraiche or sour cream, low-fat 

- 1 TSP Dijon mustard

- 1/2 lemon, juice & zest

- Salt & Pepper to taste

- Garnish: capers


Preparation:

1. Crostinis: Preheat oven to 350 degrees. Slice baguette (1/4 in thick). Place on baking sheet and sprinkle with olive oil, salt & pepper. Bake until edges are golden brown, about 5-6 minutes. Reserve.

2. Arrange lemon slices in a single layer at the bottom of a 10 in skillet. Scatter, Boulder Blues, parsley stems, tarragon stems and 1/3 of minced shallot over lemon sliced. Add wine and water.

3. Lay salmon fillets in the skillet, skinned side down, on op of lemon. Set the pan over high heat and bring to a simmer. Reduce heat to low, cover and cook until the sides of the salmon are opaque and thickest part registers 125, about 8 10 minutes. Remove pan from heat. Using a spatula, transfer salmon and to a paper towel lined plate. Combine crème fraiche, Dijon, lemon juice & zest.

4. To serve: Spread lemon crème fraiche on crostini. Place salmon on top and sprinkle with finely chopped parsley and tarragon leaves.

5. Garnish with capers.

Stir-fried Shrimp & Veggies Sprinkled with Tea-sonings

This dish is so easy to make it is tea-diculous...I know it's not a word, it's a play on words...

Ingredients:
  • 2 TBS oil
  • 2 TBS garlic, minced
  • 1 red onion, diced
  • 1 lb shrimp, peeled & deveined
  • 1 yellow squash, cubed
  • 1 green zucchini, cubed
  • 1 red bell pepper, choped
  • 1 can corn, drained
  • Tea-sonings, blend the following ingredients together:  

o1 TBS Roasted Green Mint, finley grounded

o 1/2 TBS salt

o 1/4 TBS cilantro

o 1/4 TBS basil

o 1/4 TBS thyme

o 1/4 TBS cayenne pepper

o 1/2 tsp cardamom

o 1/2 tsp oregano

Preparation:

  1. Heat oil in wok over medium-high heat. Add garlic and cook until fragrant, about 2-3 minutes. Add onion and cook until soft, about 2-3 minutes. Sprinkle 1/2 of teas-soning mixture over garlic and onion, about 1 1/2 TBS. Add shrimp and saute until pink, about 3-4 minutes, remove & reserve. Note: The shrimp don't have to cook all the way because they will continue to cook after they are removed from heat.
  2. Add zucchini, squash, bell pepper and corn to wok. Sprinkle the remaining tea-soning mixture and cook until soft but still crispy. Add reserved shrimp and cook to combine for another 1-2 minutes.

MILKY COCONUT OOLONG BOUILLABAISSE

A perfect pair...


MILKY COCONUT OOLONG, a smooth and creamy oolong blended with roasted coconut...

BOUILLABAISSE, a provencal seafood stew with mussels, clams, scallops, shrimp & calamari...



MILKY COCONUT OOLONG BOUILLABAISSE

Yields: 4 servings


Ingredients:

1 qt fish stock

2 TBS MILKY COCONUT OONLONG

2 TBS olive oil

1 yellow onion, sliced

2 cups leeks, finely sliced

1 tsp garlic, chopped

1/4 tsp fennel seed

1 lb shrimp, shelled & deveined

8 clams

12 mussels

8 scallops

1 lb calamari

8 oz diced tomatoes, drained

1 cup white wine

1 bay leaf

1/4 tsp dried thyme

2 TBS parsley

salt & pepper to taste


Preparation:

  1. Bring fish stock to a boil. Add the MILKY COCONUT OOLONG and steep for 5-6 minutes. Strain the tea leaves and reserve tea stock.
  2. Heat oil in a straight side saute pan. Add the onions, leeks, garlic and fennel seed and sweat until soften.
  3. Add shrimp, calamari & scallops, cover & cook for 2-3 minutes. 
  4. Add clams & mussels. Cover and cook for 2-3 minutes. 
  5. Add tomato, tea stock, wine, bay leaf, thyme & salt & pepper. Cover and bring to a boil. Reduce heat and simmer for 15 minutes until clams & mussels open.
  6. To serve, place equal parts of mussels, clams, shrimp, scallops, calamari and broth in 4 bowls. Garnish with parsley and serve with crostini & rouille.

Holiday Tea Infused Turkey...

Holiday Tea Infused Turkey

Ingredients:

  • (14 to 16 pound) frozen young turkey

For the brine:

  • 1 gallon chicken stock, low sodium
  • 4 tablespoon Holiday Spice Rooibos Tea (blend of red rooibos and aromatic holiday spices... cinnamon, clove, orange peel, apples, almonds, & rose petals!)
  • 1 cup kosher salt
  • 1/2 cup sugar
  • 1 tablespoon black peppercorns
  • 1 gallon heavily iced water

Preparation - 2 to 3 days before roasting:

  1. Begin thawing the turkey in the refrigerator at 38 degrees F.
  2. Tea-Infused Brine: Combine the vegetable stock, Holiday Spice Rooibos Tea, sugar, salt and in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Then remove the brine from the heat, cool to room temperature, and refrigerate.
  3. The night before you cook the turkey, combine the tea-brine, water and ice in the 5-gallon bucket. Place the thawed turkey (with innards removed) breast side down in brine. Ensure the turkey is fully immersed, cover and refrigerate 8 to 16 hours, turning the bird once half way through brining.

For the aromatics:

  • 1 red apple, sliced
  • 1 orange, peeled and sliced
  • 1/2 onion, sliced
  • 1 cinnamon stick
  • 2 TBS Holiday Spice Rooibos Tea
  • 1 cup water
  • 4 sprigs rosemary
  • 6 leaves sage

For turkey coating:

  • Tea-soning:

·      1 ½ TBS Holiday Spice Rooibos Tea

·      1 ½ tsp rosemary

·      1 tsp thyme

·      1 tsp sage

Salt & pepper to taste

Canola oil

Aromatics & Gravy Base:

  • 1 lb onion, large dice
  • ½ lb fennel, large dice
  • ½ lb carrots, large dice
  • ½ lb apple, large dice
  • ½ cup almond, roughly chopped
  • 1 TBS Holiday Spice Rooibos Tea
  • Canola oil
  • Salt & pepper
  • 3 cup dry white wine
  • 6 cup vegetable stock
  • Corn Starch slurry, mix 1 TBS cornstarch & 1 cup water together
  • 1 lemon, juice
  • 3 TBS unsalted butter, chopped

Preparation:

  1. Preheat the oven to 525° F. Remove the turkey from brine and completely rinse it with cold water and pat dry with paper towels. Discard the brine.
  2. Combine the apple, orange, onion, Holiday Spice Rooibos Tea, cinnamon stick, and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey's cavity along with the rosemary and sage. Truss the turkey and coat the skin liberally with canola oil and sprinkle tea-soning.   3. Mix onion, fennel, carrots, apples, almonds & tea together and coat with canola oil and sprinkle with salt & pepper. Place mixture on bottom of roasting pan and place the turkey on roasting rack on top of aromatics to make gravy base.
  4. Place the turkey on lowest level of the oven and roast at 500 degrees F for 30 minutes. Reduce the oven to 350° and insert a probe thermometer into thickest part of the breast. Roast until an instant thermometer reads 160° F, about a total of 2 to 2 1/2 hours. Let the turkey rest, loosely covered with foil for 15-20 minutes before carving.
  5. While the turkey in resting, place the roasting pan with gravy aromatics on top of stove and heat on high. Add wine and deglaze by scraping the bottom of the pan. Add chicken stock and simmer for 5-7 minutes. Add 1/2 of the slurry and stir occasionally. Cook until thickens and remove from heat. Add more slurry, 1 tsp at a time, if you want gravy thicker. Strain gravy and place back on medium heated stove. Whisk in lemon juice and butter until combined. Season to taste with salt ad pepper. Serve with turkey.

Steamed Mussel in Hojicha Wine Nage (Broth)

The perfect appetizer for two...

The wine infuses the dish with hints of sweetness, the Hojicha gives it a touch of earthiness, the mussels balance it with bits of saltiness and the butter brings is all together...

Steamed Mussels in Hojicha Wine broth

· 1-2 TBS butter

· 1 shallot, minced

· 2 garlic cloves

· 1/2 cup white wine

· 3/4 cup fish stock

· 1/2 TBS Hojcha green tea, loose leaf

· 1 bay leaf

· 1 lb mussels scrubbed & debeared (keep over ice)

· 2 TBS heavy cream

· 2 roma tomatoes, blanched & shocked, seeded and diced

· 1 poblano pepper, seeded & diced

· 1 TBS butter,

· Garnish: parsley, lemon (zest & juice)

· Season with salt, pepper, & cayenne pepper

· Toasted bread

1. Melt butter in pan over medium heat. Sweat shallots until soft, 2 min. Stir in garlic until fragrant. Stir in wine Hojicha tea, and bay leaf and simmer for 2 minutes.

2. Increase heat to high and add mussels. Cover and cook stirring occasionally until mussels open 3-7 minutes.

3. Using slotted spoon, transfer opened mussels to serving bowl, leaving liquid in pot, discard unopened. Remove bay leaf.

4. Toast bread.

5. Whisk in butter, cream and lemon until thickens about 1 minute. Stir in tomatoes, pepper and simmer. Garnish with parsley and season to taste. Pour nage (broth) over mussels and serve with toasted bread.

Easy to make and tea-licious to eat...

Tea Seasoned Goat Cheese, an easy and delicious appetizer

Ingredients: Tea-Sonings

Tea + Seasonings = Tea-Sonings

Mix the following ingredients

  • BOULDER BLUES Teasonings (Tea + Seasonings = Tea-sonings)

Note: Tea-soning yields about 8 TBS: Use 2-3 TBS for goat cheese and store the rest in an air-tight container

2 TBS BOULDER BLUES, finely ground


2 TBS Chipotle Chile Pepper


1 TBS orange peel, dried

1 TBS salt

2 tsp back pepper

2 tsp cilantro flakes

1 tsp thyme, dried

½ tsp cumin, ground

  • 4 - 6 oz semi soft Cherve (goat cheese)
Note: I recommend Haystack Mountain Boulder Chevre. This classic fresh semi-soft cheese is rich and creamy and is Haystack’s flagship product. 

Serving Suggestions: Serve with crostinis, or cut into discs and warm in the oven as a salad topping, add to pasta dishes, spread on sandwiches and served as part of a cheese plate with any kind of salty olive or sweet dried fruit.

Lapsang Souchong Braised Lamb

To celebrate Celestial Seasonings 40th year anniversary, Cindy Sutter, food editor for Daily Camera, wrote a tea-licious article entitled Kitchen teatime: Cooking up some tea-full recipesShe featured my Casanova Sliders, Green Roasted Tea Smoked Salmon, Corn off the Cob Quinoa Salad, Mango Tango Grilled Pineapple & Boulder Blues Muddler. 



Along side my recipes were a few from Lenny Martinelli, proprietor of the Boulder Dushanbe Teahouse, an amazing hand-crafted teahouse, presented to Boulder by Mayor Maksud Ikramov, as symbol celebrating the establishment of sister city ties. Although the city of Boulder owns the building, Martinelli operates the restaurant. Martinelli is well-known for cooking with tea and has inspired me quite a few times during his annual cooking with tea class at the Rocky Mountain Tea Festival


One of his featured recipes in the article is a Lapsang Souchong Braised Lamb, which sounds enticing and intriguing. At first glance, it seems like a stew since the lamb is cut into cubes instead of being cooked in larger pieces. You might also think about to brining the lamb overnight if cooking with tougher parts of the meat. 

Due to lack of time, sleep and energy, I'm posting the recipe before testing it. I plan to test it Sunday. So, tune in next week for a verdict. 
For the rub:

2 tablespoons Lapsang Souchong tea leaves, ground

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon pepper

For the braised lamb:

2 pounds lamb cubed

Salt and pepper to taste

1 onion diced

1 carrot diced

1 celery diced

1/2 teaspoon chopped garlic

3 tablespoons tomato paste

4 cups water

Directions: Combine all rub ingredients. Toss with meat and let sit in refrigerator for half a day. Heat oil in a dutch oven or large saute pan. Season lamb with salt and sear. When you turn the meat to sear on the other side, add onion, celery, carrot, garlic, and cook 5 minutes. Add tomato paste and brown lightly. Add water, cover pot and cook on low heat for about 11/2 hours. Taste and add salt and pepper if needed. Source: Lenny Martinelli
